What do you need:

  • 1 pound beef, trimmed of fat then cut into 1-inch pieces

  • 3 celery stalks, cut into 1/4-inch pieces
  • 3 garlic cloves, crushed and peeled
  • 1 large onion, chopped
  • 4 cups of cooked brown rice
  • 3 1/2 cups crushed tomatoes
  • 1 cup chicken broth
  • 1/3 cup chopped fresh parsley
  • 6 tablespoons nonfat plain Greek yogurt

Heat the oil in a skillet over medium heat, then cook the carrots, celery, and onion for 8 to 10 minutes or until softened.
