“Evon’s Chocolate Cake” – You make it with boiling water – Crazy huh?

Someone gave me this recipe about twenty years ago. I copied it in her kitchen on a little recipe card. My friend had served it to me and I said, “I MUST have this recipe!” Do you know how that is? Give it a try and think to yourself, I have to have this at least once a week.

One of my sisters says that when the dark chocolate cake is in the house, she wakes up in the morning, head still on the pillow, eyes wide, and immediately has a BIG smile on her face. Both my sister and I are prone to chocolate cake in the morning. What am I saying? We are prone to eating chocolate day and night! We are true connoisseurs of chocolate. Yes, expert judges in matters of taste. Big smile.

The recipe below is unique because it’s made from scratch, I know… stop thinking about the problem and think about the result, plus it’s really not that much of a problem. The other thing that makes it unique is that boiling water is needed to make it. Once everything is together, boiling water is passed over it and mixed. crazy huh? and definitely, if not defiantly unique!

“Evon’s Chocolate Cake” (Who is Evon? I have no idea!)

Preheat oven to 350 degrees

ix together:

2 cups of sugar
6 TBL. butter
1/2 teaspoon salt
2 teaspoons vanilla

Add:

2 eggs…and mix well

Sift together: (yes, you do have to sift it. It’ll come out weird if you don’t, sorry)

6 TBL. unsweetened cocoa powder
2 cups flour
2 teaspoons baking powder
2 tsp soda (and you know what happens if you don’t mix soda or baking powder with the dry stuff, right?
strange tasting things, very strange chemical reactions and ewww! awful, that’s what!)

Mix both ingredients together.

Add slowly while stirring (you can ask someone to help you)

2 cups of boiling water

To pour into your already prepared with butter and flour, oblong approx. 9×12 pan.
Bake for 45-50 minutes (try with a toothpick or whatever)

After taking it out of the oven?

COVER with foil until cool.

This is a very moist cake! You can add frosting if you want, of course. Some people just can’t eat a cake without icing, but normally this cake is served without it. BIG SMILE.
